Today’s featured blogger is Emma Oxley. Her blog is Emma Eats and Explores.
Emma isn’t your average 30-something woman. She’s a huge lover of food and travel. Her home base is in London but you can find her traveling all around the world exploring, trying new food, and living her life to the fullest.
If you’ve followed my 31 Bloggers, 31 Days features, I use my interviews and write my own stories about each blogger. This interview is different. I’m going to post what Emma wrote. She tells her story the best and I couldn’t think of a better way to write it.
Hi! I’m Emma from Emma Eats & Explores. I am a food & travel blogger living in London, UK and my two main passions in life are food and travelling. I love healthy cooking and clean eating. All of my recipes are fresh and original and free from grains, gluten and refined sugars. I love travelling and especially enjoy the foodie aspect of it, trying new cuisines and experiencing new cultures. I love eating out and finding new restaurants to blog about and my aim is to see as much of this amazing world as possible! I have also done wine appreciation courses and I love visiting vineyards and wineries and learning and tasting something new.
A few years ago, I was diagnosed with the autoimmune condition Lupus and after much research I decided to radically overhaul my diet. I found that grains, gluten and refined sugar caused an inflammatory response in my body which made all of my Lupus symptoms worse (exhaustion and fatigue, joint pain, hot flushes). I enjoyed recreating my favourite dishes in line with the new diet that I was now following and realised that there weren’t many blogs or recipes available in this particular niche.
I started Emma Eats & Explores and the feedback from readers has been inspiring. I really feel like I’m not only creating great recipes but actually helping to educate those with autoimmune diseases on ways to help manage their conditions.
I call my blog a Food, Travel and Foodie Travel blog! I blog about the recipes I create, the places I travel to, the restaurants I visit and the wines that I taste! All within the parameters of a grain, gluten and sugar-free diet.
What gave you the inspiration to start your blog?
It should really be who, not what! The answer is my mum. She begged me for years to put my recipes into the public domain and a year ago I finally went for it and launched the blog. Now, I’m inspired by my readers and a desire to share the knowledge that I have accumulated through my research into autoimmune conditions.

When asked what advice she would give to other bloggers, Emma said:
Just do it. I don’t know why I spent so long thinking about doing it rather than just typing up my first blog post. Getting started is very easy and you can learn all the tougher things as you go along. Write that post and just click publish – you never know what might come from it! – Emma
